Ploygalacturonase (PG) (EC 3.2.1.15) is a kind of pectinase, which is widely found in plants, bacteria and fungi. It catalyses the decomposition of polygalacturonic acid, which plays an important role in fruit softening, pollen pollination, seed maturation and organ shedding.
